Eggless Blueberry Waffles

I always make a big breakfast on Sunday mornings. The kids have been bugging for waffles so that’s what we had today. I added some flax seed meal to help keep them together better and some vinegar to the milk to help make them fluffier.

Eggless Blueberry Waffles

Combine the dry ingredients:

  • 2 and 1/2 cups flour
  • 3 tbsp sugar
  • 1 and 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup plain yogurt or egg replacer equal to 2 eggs
  • 2 tbsp flax seed meal

Then add:

  • 1/4 cup melted butter
  • 2 cups milk with 2 tsp vinegar

Combine until just mixed and then fold in 3/4 cup blueberries. The batter will be thick.

Use as directed in your waffle maker. I find I have to cook mine a big longer to get them crispier.
