Mint Chip Ice Cream


We are having a very hot summer and a sure way to cool down is with ice cream! This ice cream recipe is made with fresh mint and is very refreshing! My kids love making homemade ice cream in the summer and this is one of their favourites!

Mint Chip Ice Cream

In a saucepan, whisk and simmer until sugar is dissolved:

  • 3 cups heavy cream (35%)
  • 3/4 cup sugar
  • 1 tsp vanilla
  • pinch salt

Remove from heat and whisk in:

  • 1 cup milk

Then add in:

  • 1 cup steeped mint leaves in hot water, strained (I took a big bunch of mint leaves and steeped them in hot water and then strained the leaves out and used 1 cup of the liquid)
  • drop of green food colouring (optional)

Cool the ice cream mixture completely.

When cool, churn in your ice cream maker.

During the mix in cycle add in 1/2 to 3/4 cup mint chocolate chips chopped up. This makes approximately 2L of ice cream.



Strawberry White Chocolate Cheesecake Ice Cream

Summertime is coming slowly but surely here in Canada. If you enjoy homemade cream, you will want to add this recipe to your collection. It combines all the great flavours of a strawberry cheesecake. Yum! This recipe makes a very creamy ice cream. This recipe would be great with other berries as well.

Strawberry White Chocolate Cheesecake Ice cream


  • 2 cups strawberries
  • 1/2 cup sugar
  • 2 tbsp lemon juice

Let the strawberries sit while you prepare the base.

In a saucepan combine:

  • 2 cups whipping cream (35%)
  • 1/2 cup sugar
  • pinch salt

Wish and heat until just simmering, remove from heat and add in:

  • 1  pkg cream cheese (250g)

Stir in the cream cheese until it is all melted. If it doesn’t all melt put back on low heat and whisk until it is melted and smooth.

Then add:

  • 1 and 1/4 cup milk
  • 2 tsp vanilla

Whisk together and then add in the prepared strawberry mixture.

Refrigerate 2-3 hours until cold.

Churn in your ice cream maker according to its directions. Just before it is done churning, add in:

  • 1 cup white chocolate chips

Makes approximately 2L.

Rich Chocolate Ice Cream


This is a rich and delicious eggless chocolate ice cream recipe. Perfect for a hot summer’s day!

Rich Chocolate Ice Cream

In a heavy saucepan, combine:

  • 500 ml heavy cream (35 percent)
  • 1/2 cup sugar
  • 1/4 cup cocoa powder
  • pinch salt

Heat and whisk until just simmering over medium heat. All the cocoa should be incorporated.

Remove from heat and add:

  • 2 cups semi-sweet chocolate chips

Whisk until smooth, then add:

  • 2 and 1/2 cups milk
  • 1 tsp vanilla

Whisk altogether and refrigerate until cold. Use as instructed in your ice cream maker. Makes approximately 2 L.


Strawberry Ice cream


My son had to make a dinner for the family as part of his cooking class homework. He chose to make ice cream for the dessert. We just bought an ice cream maker for the summer and have experimented with a couple of eggless recipes. This one is sooooo good and not overly sweet. You can use fresh strawberries as well but since it isn’t strawberry season yet, he used frozen. We will definitely be making this again with fresh berries.

Strawberry Ice Cream

Mash the berries and mix with the sugar and the lemon juice:

  • 3 cups frozen berries, thawed with juice
  • 1/2 cup sugar
  • 1/4 cup lemon juice

In a separate bowl, mix together until the sugar dissolves:

  • 1 and 1/4 whole milk
  • 1/2 cup sugar

The mix in:

  • 2 cups heavy cream (35 percent)
  • 1 and 1/2 tsp vanilla

Gently mix and then add in the strawberry mixture. Mix again gently and then pour into your ice cream maker. Churn according to your ice cream maker’s directions. Makes about 2L.
