Gingerbread Men

This is a really yummy gingerbread man recipe. There is only one egg to replace so you will have no problem making them without eggs. The kids love making them every year for Christmas.

Gingerbread Men

  • 6 tbsp softened butter
  • 2 tbsp softened shortening

Mix well and then add:

  • 3/4 cup packed brown sugar
  • 1/4 cup plain unsweetened yogurt (or egg replacer equal to 1 egg)

Then add and mix well:

  • 1/2 cup molasses
  • 2 tsp vanilla
  • 1 tsp lemon zest or orange zest

Mix well and add sifted dry ingredients slowly to the batter until full incorporated:

  • 3 cups flour
  • 1 and 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp ginger
  • 1 and 3/4 tsp cinnamon
  • 1/4 tsp allspice

Refrigerate for about 2 hours and then take out for about a half hour before you want to roll it out. Roll it 1/4 inch thick and Bake for 8-10 minutes at 350 degrees F.

Icing:

  • 1/4 cup softened butter
  • 2 and 1/2 cups icing sugar
  • one squeeze of lemon
  • 1/2 tsp vanilla
  • 2-3 tbsp milk

Beat all the ingredients together until smooth. Decorate as desired.

    Do you think this recipe would work if I left out the shortening and replaced it with more butter?

    1. It should work, the resulting cookies will be a bit softer probably. Have fun making them!
