Mango Blueberry Oat Muffins


The combination of the mango and the blueberries in these muffins is delicious. I had a slightly under ripe mango that was a little tart so I used it to make muffins. If you like coconut you can definitely substitute the blueberries for coconut. My kids aren’t too fond of coconut but they love blueberries so these are a hit with them.

This recipe makes 12 small muffins.

Mango Blueberry Oat Muffins

Combine dry ingredients:

  • 1 and 1/2 cup flour
  • 1/2 cup oats
  • 1/2 cup sugar
  • 2 tbsp ground flax seed
  • 1 and 1/2 tsp baking powder
  • 1/4 tsp salt

Then add wet ingredients:

  • 1 tbsp egg replacer mixed with 3 tbsp water (equivalent to 1 egg)
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 cup canola oil
  • 1 tsp vanilla

Mix together until just combined. Then gently mix in 1 diced mango and a couple handfuls of blueberries. Spoon into muffin tin lined with paper cups and top with a sprinkling of large flake oats.

Bake 375 degrees F for approximately 25 minutes.
