These waffles require an overnight sitting in the refrigerator, but I love this recipe as it never sticks in my waffle iron and the yeast adds a nice flavor to them. Also, preparing them the night before saves time in the morning! These are yummy to use as dessert waffles as well.
Belgian Yeast Waffles
In a saucepan heat until warm:
- 2 cups milk
- 1/2 cup water
- 1/4 cup butter
In a large bowl combine (large enough to factor in the yeast making the dough rise):
- 3 cups flour
- 1 tbsp sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tbsp yeast
Mix together in a small bowl:
- 1/2 cup plain unsweetened yogurt or egg replacer equal to 2 eggs
Mix together the milk mixture, the egg replacer mixture and the flour mixture thoroughly in the large bowl. Then cover with plastic wrap and then foil. Refrigerate overnight.
Use as directed in a greased waffle iron.
