My friend sent me this eggless cake recipe . I only made a couple of changes ;-). This recipe works great and is quite tasty and moist. I frosted it with a caramel icing recipe I got off of allrecipes.com, but you can top it with whatever frosting you like.
Spice Cake
Combine dry ingredients:
- 3 cups flour
- 2 cups white sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
Make a well and add:
- 2/3 cup oil
- 1 cup water
- 1 cup milk*
- 2 tbsp vinegar
- 2 tsp vanilla
Beat with a mixer until smooth. Bake 350 degrees F for about 40 minutes until a toothpick inserted comes out clean. I used a tube cake pan, but it can also be baked in a 9 by 13 pan or two 9″ rounds. Top with your choice of frosting.
*Note: If you bake dairy-free you can use all water in this recipe.
