Chocolate Cannoli Cupcakes

I saw a episode of Bakery Boss where the owner of one of the bakeries Buddy Valestro was helping, made a cannoli cupcake. Then I saw a recipe on Pinterest for a chocolate cannoli cupcake. So I decided to combine the 2 ideas, using my chocolate cake recipe for the base of the cupcake.

Now, I have never had a cannoli, much less baked anything resembling a cannoli so a cupcake seemed like the way to go! This takes a little extra time, but they are worth it!

Chocolate Cupcakes

Combine Dry Ingredients:

3 cups flour
2 cups sugar
1/2 cup cocoa (if you want to bump up the chocolate add an extra 1/4 cup cocoa)
2 tsp baking powder
1 tsp baking soda
1 tsp salt

Mix and make a well. In the well add:

3/4 cup vegetable or canola oil
2 tsp vanilla
2 tsp vinegar
1 cup water
1 cup milk

Mix really well with a mixer. This made 20 good size cupcakes ( you can get 24 if you make them a bit smaller). Bake 350 degrees for approximately 20 minutes.

Chocolate Cannoli Filling

  • 1 cup ricotta cheese
  • 1/4 cup white sugar
  • 1 tbsp cocoa powder
  • 1 tsp vanilla

Mix really well. Fill a pastry bag with the cream.

Poke a hole in each of the cooled cupcakes about 3/4 of the way down. I used the end of a wooden spoon. Fill gently. The filling will pop out the top when full.

At this point they will look like this:

Ice with your favorite frosting or you can use whipped cream.

I used whipped cream.

Whipped Cream

  • 2 cups whipping cream
  • 1/4 cup icing suagr

Beat the cream and gradually add the sugar to the mixture. Beat until it is just beyond soft peaks.

Note: I added 2 tbsp of prepared gelatin to stabilize my whipping cream. This is a great video that I found on youtube which explains how to make stabilized whipped cream: (https://www.youtube.com/watch?v=m5hZUm2g7vU)

Top with mini chocolate chips!

    Hi,
    Could you please let me know how I could replace gelatin?

    1. You don’t need to use the gelatin to make the whipped cream. You can simply use the whipping cream and the icing sugar. I have read online though that agar-agar can be used instead of gelatin but I have never used it before.
