I am always looking for muffin recipes for breakfasts and school lunches. My kids love blueberries so they will eat these up in no time. These are not very sweet muffins so they are perfect for breakfasts.
Blueberry Oat Muffins
Combine dry ingredients:
- 1 and 1/2 cups flour
- 1 cup oats
- 2 tbsp ground flax seed
- 1/3 cup packed brown sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 tsp cinnamon
Then add wet ingredients (you can mix these altogether beforehand):
- 1/2 cup plain yogurt (equivalent to 2 eggs) *I have increased this to make them a bit lighter.
- 1/4 cup canola oil
- 1 cup milk
- 1 tsp vanilla
Stir only until just mixed, then fold in:
- 1 cup blueberries dusted with flour
Spoon into paper-lined muffin tins. Bake 400 degrees F approximately 20 minutes. Makes 12.

these are so simple and healthy. Do you recommend using quick oats or regular?
I used large flake oats for texture but you can use whatever you have on hand.

I usually use unbleached white flour unless the recipe states whole wheat. This recipe uses white flour. Enjoy!
