My 12 year old son wanted to make me a cake for Mother’s Day. Let me follow that up with the fact that I don’t like people in my kitchen. I’m a bit of a control freak that way :). And since he is not very experienced it takes him forEVER to make anything. However, I managed to get by with very minimal interference. This cake recipe is delicious and works with either yogurt or a egg replacer like Bob’s Red Mill Egg Replacer. His cake turned out great!!
Chocolate Chip Coffee Cake
Prepare Topping:
- 3/4 cup brown sugar
- 1/4 cup flour
- 1/4 cup softened butter
- 2 cups chocolate chips
Mix together and set aside.
Cake:
Cream together:
- 1/2 cup softened butter
- 1 cup white sugar
Then add in egg replacer:
- either 1/2 cup plain yogurt
- or 2 tbsp egg replacer mixed with 6 tbsp water
(equivalent to 2 eggs)
Then add:
- 1 cup milk
Mix well and then add in sifted dry ingredients:
- 3 cups flour
- 1 tbsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
Mix until well blended. This batter will be thick.
Spread half the batter in the bottom of a tube pan. Then top with 1/2 of the topping mixture. Then add the rest of the batter for the next layer and cover with the rest of the topping.
Bake 350 degrees F for approximately 60 minutes. It will come out with yummy layers of cake and chocolate!
