My son had to make a dinner for the family as part of his cooking class homework. He chose to make ice cream for the dessert. We just bought an ice cream maker for the summer and have experimented with a couple of eggless recipes. This one is sooooo good and not overly sweet. You can use fresh strawberries as well but since it isn’t strawberry season yet, he used frozen. We will definitely be making this again with fresh berries.
Strawberry Ice Cream
Mash the berries and mix with the sugar and the lemon juice:
- 3 cups frozen berries, thawed with juice
- 1/2 cup sugar
- 1/4 cup lemon juice
In a separate bowl, mix together until the sugar dissolves:
- 1 and 1/4 whole milk
- 1/2 cup sugar
The mix in:
- 2 cups heavy cream (35 percent)
- 1 and 1/2 tsp vanilla
Gently mix and then add in the strawberry mixture. Mix again gently and then pour into your ice cream maker. Churn according to your ice cream maker’s directions. Makes about 2L.
