With St. Patrick’s Day on the horizon, I have been thinking about green desserts. This pudding recipe has the benefit of complimenting the upcoming St. Paddy’s Day and being made from pistchios which are pretty amazing!
Pistachio Pudding
In a food processor, pulse into a paste:
- 1/2 cup salted pistachios
- 1/3 cup sugar
- 2 tbsp water
In a saucepan, combine with a whisk:
- 2 and 1/2 cups milk
- 2 tbsp cornstarch
- 1/4 sugar
- A drop or two of green food colouring
Add in the pistachio paste and heat until boiling on medium heat, whisking constantly. After the pudding comes to a boil, boil for another 2 minutes. Remove from heat and add in:
- 1 tsp vanilla
- 2 tbsp butter
Cool for 5 minutes, stirring a couple of times before dividing among serving dishes. Makes 4-5 servings. Cool.
