A friend of mine gave me a sample of her mother in law’s oatmeal maple sandwich cookies and I asked for the recipe but her husband said they are illegal cookies and the recipe is a secret. So I went on Google and found a couple of recipes which seemed similar and adapted them to make them eggless! Actually she was going to give me the recipe but she was away, or at least that’s the story she told me! 🙂
Here is an eggless version:
Maple Oatmeal Sandwich Cookies:
Cream together:
- 6 tbsp softened butter
- 2 tbsp shortening
- 1 cup packed brown sugar
Then add;
- 2 tbsp egg replacer mixed with 6 tbsp of water (equivalent to 2 eggs)
- 2 tbsp maple syrup
Mix well and then add the dry ingredients:
- 1 and 1/2 cup flour
- 1 and 1/2 cup oats
- 1/2 tsp baking soda
- pinch salt
- 1/4 tsp cinnamon
Incorporate well and drop by spoonfuls onto parchment lined sheet pans. I used a small cookie scoop and then flattened the cookies with a fork.
Bake for approximately 10 mins in a 350 degrees F oven.
Allow to cool and fill.
Filling:
- 1/2 cup softened butter
- 1 and 1/2 cup icing sugar
- 3 tbsp maple syrup
Whip until fluffy and fill the cookies. Enjoy!
